铁(Ⅱ)-邻菲罗啉-BPR体系分光光度法测定果蔬中的维生素C

摘    要:在pH6.0的乙酸-乙酸钠缓冲溶液体系中,有CTMAB存在下,维生素C将铁(Ⅲ)-邻菲罗啉还原,还原产物与溴邻苯三酚红(BPR)形成铁(Ⅱ)-邻菲罗啉-BPR缔合物,其λmax=580nm,ε=1.09×105L·mol-1·cm-1,维生素C含量在0~70μg·25mL-1范围内服从比耳定律。此法用于测定新鲜果蔬中的维生素C获得较满意的结果

Abstract:In HAcNaAc buffer solution (pH6.0) Fe()1,10phenanthroline is reduced by vitamin C to form Fe()1,10phenanthrolineBPR association compound in the presence of CTMAB. This compound has a maximum absorption at 580nm. Beer's law is obeyed in the range of 070 g/25 mL. This molar absorptivity is 1.09105 Lmol-1cm-1. This method has been applied to the determination of vitamin C in several kinds of fruits and vegetables with satisfactory results.
