| 乳酸菌对魔芋甘露低聚糖的降解与利用 | |

| 摘 要： | 研究了4株乳酸菌(Lactobacillus animalis、Lactobacillus plantarum、Enterococcus faecalis及Lactobacillus reuteri)厌氧静置培养时对魔芋甘露低聚糖(konjac mannan-oligosaccharide,KMO)的降解利用情况。结果表明,Enterococcus faecalis和Lactobacillus plantarum能快速、完全地利用KMO中的DP2~3组分,Lactobacillus animalis和Lactobacillus reuteri则主要利用其中的DP2组分,且利用速率较慢。4株菌在含有KMO的培养基中生长,均能累积产生有机酸和短链脂肪酸,其中以乳酸和乙酸为主要代谢产物,但产酸能力存在差异。该研究结果可为KMO益生元产品的开发提供依据。 |
