用差示扫描量热法研究水合作用对葡萄糖氧化酶的热稳定性
摘    要:在含水量为0.05~1.20克(水)/克(蛋白)范围内,用差示扫描量热法(DSC)研究了水—葡萄糖氧化酶体系的热稳定性.结果表明,葡萄糖氧化酶的变性峰和热变前峰的温度和面积都强烈地依赖于蛋白质的含水量.

Abstract:The thermal stability of water-glucose oxidase system Was investigated in the water content range of 0. 05 g (water)/g (Protein). The observation has shown the temperatuie and area of both denaturation peak and prethermodenature peak are stronly dependent on the water content.
