小麦淀粉制备异麦芽低聚糖的研究

摘    要:以小麦淀粉为原料,用耐高温α-淀粉酶液化,以米曲霉淀粉酶和转葡萄糖苷酶同时糖化转苷制备异麦芽低聚糖.研究结果表明,最佳工艺条件为液化至DE值15~17,糖化转苷温度55℃,时间24h,pH4.5,米曲霉淀粉酶用量10SKUB/g干物质,转葡萄糖苷酶用量1.4TGU/g干物质.产品含异麦芽糖23.3%,潘糖13.9%和异麦芽三糖10.2%,其质量优于市场同类产品.

Abstract:This paper studied enzymatic preparation of isomalto-oligosacchrides by using wheat starch as raw material.Liquefied by thermostable α-amylase“SPEZYMEFred”,sacchrified by fungal α-amylase “CLARASEL” and transglucosylated by “Transglucosidase L-500”(all from GENENCOR International Inc.).The optimum conditions were obtained:liquefied to 15-17 DE,sacchrified and transglucosylated at 55℃ for 24 hours,pH 4.5,10 SKBU/g CLARASEL and 1.4 TGU/g Transglucosidase L-500 added.The product contains 23.3% isomaltose,13.9% panose and 10.2% isomaltotriose.Its quality is superior to those in the market.
