橄榄核仁油的理化特性及脂肪酸组成

摘    要:为开发和利用橄榄核仁资源,对橄榄核仁油的理化特性和脂肪酸组成进行研究。结果表明,橄榄核仁油主要含不饱和脂肪酸,其中亚油酸含量50.04%、油酸含量20.75%,还含有奇数碳脂肪酸十七烷酸,是一种值得开发利用的营养保健油源。

Abstract:The physicochemical properties and fatty acid composition of Canarium album L. kernel oil have been investigated. The results indicated that unsaturated fatty acids were the main components of Canarium album L. kernel oil, and linoleic acid content was 50.04%, oleic acid was 20.75%, and odd number carbon fatty acid (heptadecanoic acid) was discovered for the first time in Canarium album L. kernel oil. As a healthy oil resource, it will have a profound developing potential.
