A review of rapeseed oil uses for edible purposes

Abstract:Food technological aspects on the use of rape-seed oil and otherCruciferae seed oils as salad oils, in margarine, shortenings and some other foods are briefly reviewed. It is concluded that these oils in hydrogenated or nonhydrogenated form may compete favorably with other vegetable oils and animal fats. One of nine papers published from the Symposium, “Cruciferous Oilseeds,” ISF-AOCS World Congress, Chicago, September 1970.
