Current Application of Mass Spectrometry in Chinese Liquor Safety Analysis

Chinese liquor is a traditional distilled liquor with a history of several thousand years.Liquor consumption market is wide,people's demand for liquor is also increasing.In recent years,more and more researchers have paid attention to the identification and application of liquor.As people pay more attention to health,pesticide residues,plasticizers,sweeteners,biogenic amines and other harmful substances in liquor have become the quality parameters concerned by consumers.This paper compares the advantages and disadvantages of mass spectrometry and other detection techniques,and summarizes the application of mass spectrometry and mass spectrometry in liquor safety analysis in recent years.Then,the development and the main direction of liquor composition analysis were explored and prospected.
