| 摘 要： | 将山东与山西不同产地的清香大曲使用于武汉某公司清香基酒的生产,两种大曲在理化指标上相近,生产过程中温升大曲线类似、在新产酒的出酒率上山东大曲要高出山西大曲2.38％,新产酒的理化指标检测上二者相近,品评员的评审结果山东大曲要略优于山西大曲,由此可判断武汉地域生产清香型酒用大曲更适合山东大曲.

| Abstract: | Applying Qingxiangqu from different producing areas in Shandong and Shanxi to the production of Qingxiangji liquor in a company in Wuhan, the physical and chemical indexes of the two Daqu are similar, the temperature rise curve in the production process is similar, the liquor yield of Shandong Daqu is 2.38% higher than that of Shanxi Daqu in the production of new liquor, the physical and chemical indexes of the new liquor are similar, and the appraisal results of the appraisers are slightly better than that of Shanxi Daqu, which can be judged. It is more suitable for Shandong Daqu to produce Scent wine in Wuhan area. |
