摘    要:膳食纤维具有重要的生理功能,对人体健康起着一定的调节作用;而且,膳食纤维具备的生理功能,使得膳食纤维在食品中的应用更为广泛。甜菜制糖后会产生甜菜粕,甜菜粕中含有大量纤维素、半纤维素及果胶等膳食纤维。本文阐述了膳食纤维的定义、分类及理化性质,并且针对前人的研究总结了甜菜粕膳食纤维的特点,为以后甜菜膳食纤维的研究工作提供参考。

Abstract:Dietary fiber has important physiological functions, and it also has regulating function to human health, due to those, the application of dietary fiber in food products is increasing. After beet sugaring, it will product sugar beet pulp, which contain a lot of dietary fiber, such as : cellulose, hemi - cellulose and pectin et al. This paper mainly introduced the definition,the composition ,the physicochemical properties, and the application of dietary fiber, and according to researches of plagiarisms, it also summed up the features of dietary fiber of sugar beet pulp,which can be a reference for further study of dietary fiber from beet.
