摘    要:在比较试验的基础上,选用碱性H2O2对蚕蛹蛋白的脱色工艺进行研究.在考察单因素的基础上,以亨特白度为考察指标,研究处理温度、H2O2浓度、处理时间、pH、固液比对蚕蛹蛋白脱色的影响,通过正交试验优化脱色工艺.结果表明,优化后的工艺条件为处理温度75℃、H2O2浓度14%、时间70min、pH8.5、固液比1∶25.在该...

Abstract:Basic on a comparative experiment,study the decolorization process of protein from silkworm chrysalis by using alkaline H2O2.In the study based on single factor,regarding Hunter whiteness of study indicators,study how treatment temperature,H2O2 concentration,processing time,pH,solid-to-liquid ratio affect the decolorization of pupa protein,by orthogonal test optimizing decoloration process.The results indicated that the best decolorization process of protein from silkworm chrysalis were as follows:treatment temperature 75℃,H2O2 concentration 14%,processing time 70min,pH 8.5,solid-to-liquid ratio 1∶ 25.Under this condition,Hunter whiteness can reach 63.96%.
