摘    要:应用加速溶剂萃取(ASE)技术对食品中的油脂进行富集,经甲酯化反应后,通过HP-88毛细管色谱柱分离测定食品中反式脂肪酸含量。结果:在提取温度125℃,提取压力1500psi,以正己烷/二氯甲影甲醇(3:2:1,V/V/V)可对食品中反式脂肪酸进行有效提取,以C16:1-t9为例,该方法加标回收率在96.1%~99.3%,相对标准偏差为0.5%~2.3%,最低检测限为2.0μg/mL,顺、反式脂肪酸分离良好。该方法简单、快速、所耗溶剂少、效率高,适用于食品中脂肪酸的测定。

Abstract:An analytical procedure has been developed for determination of trans fat acids in foods. Fat, which was extracted using accelerated solvent extraction (ASE), was methylated and separated on a capillary gas chromatography column of HP - 88. Hexane - dichloromethane - methanol mixed solution (3 : 2 : 1, V/V/V ) was used as extractant. The temperature of extraction was 125℃ and the pressure was 1500psi. The average recoveries were 96.1% -99.3% with RSD 0.5% - 2.3%. The lowest detection limit was 2.0μg/mL. The results showed that this method is simple, rapid, sensitive, and reliable, and the ASE is suitable for the determination of fat acids in foods.
