| 摘 要： | 主要研究了美人蕉花红色素的提取及其稳定性。实验结果表明,此色素是水溶性色素,在酸性条件下稳定性好,但碱性条件、光照、氧化还原剂及一些金属离子等对其稳定性有一定的影响。

| Abstract: | The characters of red pigment form canna flower were studied in this paper.This pigment can picked up.In acidity ethanol and dissolved in water.The effects of pH value,sunlight,ultraviolet,temperature,oxidizer,reductunt,metallic ions,carbonhydrates,organic acids,on stability of the pigment were studied. |
