桑黄发酵菌粉与桑黄子实体成分分析比较

摘    要:对桑黄子实体和发酵菌粉的氨基酸、脂肪酸、矿物元素以及多糖等主要活性成分的含量进行了分析比较。结果表明,桑黄子实体和发酵菌粉均含有17种氨基酸,均以谷氨酸含量最高,必需氨基酸中都以亮氨酸含量最高。优势脂肪酸均为不饱和脂肪酸,且均以油酸,亚油酸为主。桑黄子实体和发酵菌粉中都含有人体必不可缺的钙、铁、锌等8种矿物质元素。都含有丰富的多糖、黄酮类化合物和酚类物质,桑黄子实体中的多酚类物质含量是发酵菌粉的3.91倍,为37.52 mg/g;但发酵菌粉中的粗多糖含量是子实体的22.48倍,为94.20 mg/ g。

Abstract:This investigation characterized the chemical compositions of fruiting bodies and fermentation powder of Phellinus igniarius (L.ex Fr.) Quel,including amino acid,mineral,fatty acids,polysacchar- rides and so on.The results showed that the fruiting bodies and fermentation powder of Phellinus igniarius contained 17 kinds of amino acids,both of which the glutamate among nonessential amino acid and the leu- cine among essential amino acid reached the highest level.Unsaturated fatty acids in both of the two ingredi- ents were advantageous to saturated fatty acids,in which oleic acid and linoleic acid were main components. Both fruiting bodies and fermentation powder of Phellinus igniarius contained eight minerals,such as calci- um,iron and zinc,and were rich in polysaccharides,flavonoids and phenols.But the content of phenols of the fruiting bodies reached 37.52mg/g which was 3.91 times higher than that of fermentation powder of Phellinus igniarius,and the content of polysaccharides of fermentation powder of Phellinus igniarius reached 94.20 mg/g,which was 22.48 times higher than that of the fruiting bodies.
