Abstract:Food-borne pathogenic bacteria and spoilage bacteria contamination has always been an important factor in food safety incidents. Traditional microbial detection methods are accurate, however they take long time and need complicated operation, so it is of great significances to develop efficient and fast methods. With scientific and technological development in recent years, many new methods are gradually applied in the detection, they are more effective and specific, the detection time is shorter, and have a wide application. This paper reviews the rapid detection technology of food-borne pathogenic bacteria and spoilage bacteria in recent years, such as paper method, flow cytometry, electrical impedance measurement, adenosine triphosphoric acid bioluminescence techniques, spectroscopic techniques, nucleic acid amplification-based technologies, enzyme-linked immunosorbent assay, biosensors, and so on.The principle, advantages and disadvantages, application progress and the development direction of each method are discussed. It is expected to provide a reference for the prevention and control of food safety incidents caused by food-borne pathogenic bacteria and spoilage bacteria.
