摘    要:本文测定了不同结构氨基酸对水解类植物多酚溶解度的影响,并通过数据分析,证明了植物鞣质主要通过疏水键与氨基酸结合,从而为阐明水解类植物鞣质与蛋白质的反应机理奠定了基础.

Abstract:In this paper the influence of amino acids on solubility of hydrolysable vegetable tannins has been investigated. The data obtained indicated that vegetable tannins could associate with animo acids by hydrophobic bond which is one of predominant patterns of vegetable tannin-amino acid interaction and is favourable for us to understand vegetable tannin-protein interaction.
