红曲色素行业发展的问题与分析

摘    要:红曲色素是我国特有的一种传统发酵产品,它主要用于食品工业的着色剂,然而在红曲色素产业中存在众多问题,如桔霉素、微生物残留、产品单一应用范围窄等问题,这些问题在一定程度上限制了红曲色素产业的发展。对红曲色素产业中存在的上述问题进行分析,并对红曲色素产业进行展望,探讨红曲色素产业发展策略。

Abstract:Monascus pigment is a traditional fermentation product in China,it is mainly used as colorants in food industry.However,there are many problems existing in Monascus pigment industry including citrinin contamination,microbiological contamination and narrow range of application.These problems hinder the development of the Monascus pigment industry.The problems mentioned above and suggestion for solving these problems were discussed and prospected.
