技能大赛对旅游餐饮职业教学的指向探析

摘    要:2012年全国职业院校技能大赛首次增设旅游类餐饮技能比赛项目。首次开赛,旅游院校就响应广、覆盖全,说明了大赛的必要性和迫切性。大赛对改进、完善旅游中职、高职餐饮专业教学有众多指向上的启示。首先,中职比规范,赛执行,教育学生对通识餐饮技能准确掌握应常抓不懈;其次,高职比应变,赛创新,因此对学生拔高拓展餐饮技能训练刻不容缓;最后,要厘清中高职区别,中职强基,高职提升,而对学生职业态度的培养始终应特别重视。

The Guiding Role of Catering Skill Competitions for Tourism and Catering Education in Vocational Schools

Abstract:The 2012 national vocational skill competitions among vocational colleges included tourism catering skills, and the active participation of schools of tourism reveals the necessity and urgency of such competitions, which plays a guiding role for the improvement and optimization of the teaching of culinary courses in secondary and higher vocational schools. Firstly, secondary schools compete in terms of standard process, which suggests that secondary education should put emphasis on mastery of culinary skills. Secondly, vocational colleges compete in terms of emergency response and innovation, which is a reminder that vocational college students should make efforts to develop their skills both intensively and extensively. Finally, there should be a clear dis- tinction between secondary and higher vocational schools where secondary schools emphasizes basic skills and colleges stresses further skill development. However, training of professionalism is crucial on both levels.
