江苏职业院校烹饪技能大赛的研究与思考

职业教育必须以就业为导向，以能力为根本，培养社会需要的高技能人才。为了实现这一目的，必须努力提高职业教育的教学水平，尤其是技能教育的水平。从江苏省烹饪技能大赛可以窥探出江苏烹饪教育的现状，表明职业技能教育必须在课程改革中凸现技能教育，加强“双师型”师资队伍建设，重视实训基地的技能教学功用，强化技能的基础训练，狠抓技能的环节教学，在校企合作、社会实习中做足文章。

On Culinary Skill Competitions of Jiangsu Vocational Colleges

Vocational education must be employment-and-competence-oriented to meet the demand of the socie- ty. To achieve this goal, focus should be placed on teaching especially skill education. Culinary skill competi- tions of Jiangsu provide a glimpse into its cuisine education, and suggest that practical skills are the core of teaching reforms in vocational education.
