摘    要:本文对方便食品的真空浸渍,真空脱水和真空油炸技术,从食品加工原理,加工技术特点到加工设备等方面,以实验为依据,作了分析和研究。提出了在真空机制下,加工不同物料的方法和原理,进而分析了真空技术在食品加工中的应用与发展。

Abstract:This article demonstratedvacuum infusing, vacuum dehydration andvacuum frying technology of conveniencefood. On the basis of experiment,processingprinciple and production equipment of convenience food were analyzed and studied. Invacuum condition, processing method andprinciple of different material were put forward. Lastly it was analyzed that application,and development of vacuum technique in theprocess of food treatment.
