| 摘 要： | 近年来，我国鸡肉产量增长迅速，现已成为世界第二鸡肉生产大国，鸡肉加工业呈现出了良好的发展势头，但与发达国家相比，我国无论在基础研究、设备研发还是在新技术应用等方面都还存在不小差距。本文从肉鸡屠宰、鸡肉产品深加工、鸡肉及产品质量安全控制、肉鸡副产物利用等几个方面对我国和发达国家的肉鸡加工科技现状进行了对比分析，并在此基础上探讨了我国肉鸡加工业的科技发展趋势。
