摘    要:植物源抗氧化活性肽因其良好的抗氧化性和安全性高等特点,受到国内外广泛关注。本文主要介绍了大豆肽、玉米肽、大米肽、小麦肽等几种常见植物源抗氧化活性肽,以及它们在制备、功能和应用方面的研究概况,并提出了现阶段发展中存在的问题,为今后的研究提供参考。
