固定化酶法生产低聚异麦芽糖的研究

摘    要:研究采用固定化α 葡萄糖苷酶生产低聚异麦芽糖 ,研究结果表明 ,最佳工艺条件为 :初始pH值 4 8,反应温度 60℃ ,底物流速 2 4mL/h。在保持产品组成恒定的条件下 ,底物流速与反应时间之间的关系模型为底物流速 ,V =-4 42 15lnt+ 2 6 5 79,R2 =0 984,符合对数规律。与游离酶法低聚异麦芽糖相比 ,固定化酶法低聚异麦芽糖的质量稍有下降 ,但仍符合低聚异麦芽糖的工业标准

Abstract:The immobilized α glucosidase was adopted to produce isomaltooligosaccharide in the study, and the results showed that, the optimum reaction pH was 4 8, the optimum reaction temperature was 60℃, and the optimum feeding in velocity of substrate was 24?mL/h When the quality and composition of product were constant, the model describing the relation of the feeding in velocity of substrate and reaction time was,V=-4 4215 ln t+26 579, R 2=0 984,which accorded with the logarithmic law Compared with that of the isomaltooligosaccharide made by soluble enzyme, the quality of the product made by immobilized enzyme slightly decreased, which was also above the industry criteria
