超临界CO2萃取的番茄红素稳定性研究

摘    要:系统研究了温度、光、氨气保护、氧化剂和还原剂对超临界CO2萃取番茄红素稳定性的影响。研究表明,温度升高,番茄红素稳定性急剧下降;蔽光和氮气保护能有效的提高番茄红素的稳定性;氧化剂加速其分解;适宜浓度的还原剂可以有效的提高其稳定性。

Abstract:Stability of lycopene in extract was studied in detail.Results show that lycopene's stability went down sharply when storage temperature was kept higher.Remaining rate increased when extract was dept in nitrogen and in dark.H_2O_2 caused lycopene degradation evidently and remaining rate became lower with the increase of H_2O_2 concentration.Ascorbic acid(VC)acts as protector for lycopene in low concentration and as destroyer in high.
