啤酒质量优劣的鉴别检验

摘    要:从啤酒的泡沫、香气及味道等方面,论述了啤酒质量的感官检验。从感官和理化检验两方面介绍了在啤酒中兑水的检验方法。运用pH值的测定、洗衣粉的检验、非食用色素的检验等方法,论述了假啤酒的鉴别检验措施。对于啤酒中EDTA化合物的检验、熟啤酒和鲜啤酒的鉴别检验等,也作了较为典型直观的说明。

Abstract:Sense teste of beer quality were discussed from theaspects of watching beer's foam, smelling andtasting.Added water beer test was introduced from two aspects of sense, physics and chemical methods. Falsebeer could be identified by determining pH, washing powder and uneatable pigment contents in beer. Test of EDTA chemical compound infor and identification test of draft beer and pasteurized beer were all oillustrated typically and audio- visually.
