| 摘 要： | 苹果多酚是一种新型的天然抗氧化剂，在未成熟的苹果和果渣中含量丰富。主要介绍了目前国内外对苹果中多酚类物质的研究现状，并概述了苹果多酚的各种提取方法，以及其在食品领域的应用现状。
