打叶复烤环节碳酸钠缓冲液处理对贮藏片烟TSNAs累积和烟叶品质的影响

摘    要:  背景和目的  贮藏是烟叶加工过程中的重要阶段,贮藏过程中烟叶中TSNAs含量会逐渐升高。本文的目的是研究烟叶长期贮藏过程中TSNAs的累积以及其对烟叶品质的影响。  方法  在打叶复烤环节使用碳酸钠缓冲液调整马里兰烟和白肋烟叶的pH值,烟叶正常贮藏醇化后,检测烟叶pH值、TSNAs含量、烟叶外观、含水率、烟叶常规化学成分和感官质量。  结果  ① 碳酸钠处理过的烟叶pH值高于对照组,并随着贮藏时间的延长而保持稳定;②马里兰处理组烟叶中TSNAs含量比对照组低40.4%,白肋烟处理组烟叶中TSNAs含量比对照组低36.2%;碳酸钠处理组烟叶外观与对照组无差异;③处理组烟叶含水率高于对照组,总植物碱、总糖、氨、总挥发碱含量低于对照组,感官质量得分略高于对照组。  结论  碳酸钠缓冲液能够减缓烟叶贮藏期间TSNAs的累积,且未导致贮藏后的烟叶品质下降。

Effect of sodium carbonate buffer treatment on TSNAs accumulation and quality of tobacco leaves in the process of threshing and redrying

Abstract:  Background and Objective  Tobacco leaves storage is an important stage in tobacco processing, during which Tobacco Specific N-nitrosamines (TSNAs) in tobacco leaves gradually increase. The purpose of this study is to investigate the influence of sodium carbonate on the accumulation of TSNAs and the quality of tobacco leaves during long-term storage.  Methods  Sodium carbonate buffer was used to adjust the pH value of Maryland and Burley tobacco leaves during threshing and redrying process. After the treated tobacco leaves were naturally stored in 18 months, the tobacco samples were periodically collected to measure the pH value, the content of TSNAs, the appearance of tobacco leaves, the moisture content, chemical composition and sensory quality.  Results  The results showed that the pH value of tobacco leaf in the treatment group was higher than that in the control group, and such pH value remained stable with the storage time. The TSNAs levels in the treatment groups of Maryland and Burley tobacco were 40.4% and 36.2% less than that in the control group, respectively. There was no difference in appearance of tobacco leaves between the treatment group and the control group. The moisture content of the treatment group was higher than that of the control group. The total alkaloids and total sugar content in the treatment group were slightly lower than that in the control group. The ammonia and total volatile alkali in the treatment group were lower than that in the control group. The sensory quality of the treatment group was better than that of the control group.  Conclusion  It can be seen that sodium carbonate buffer can reduce the accumulation of TSNAs during storage of tobacco leaves, without negatively affecting the quality of tobacco leaves.
