摘    要:对采用绿色木霉发酵改性的苹果渣膳食纤维的理化特性进行研究。结果表明,改性苹果渣膳食纤维显示较佳的理化性质,膨胀力为6.25 mL/g,持水力为4.53 g/g。改性苹果渣膳食纤维在pH 2.0条件下对NO 2-吸附率可达98.8%,可以将NO 2-浓度降低至3.5μmol/L,有效避免该物质对人体产生危害。吸附胆酸钠的测定结果表明,3 g改性苹果渣膳食纤维对胆酸钠的吸附率可以达到72.8%,对降低血清胆固醇具有积极的意义。

Abstract:The physicochemical properties of apple pomace dietary fiber modified by Trichoderma viride are studied.The results show that the modified apple pomace dietary fiber shows better physicochemical properties,with the expansion force of 6.25 mL/g and the water holding capacity of 4.53 g/g.Under the condition of pH 2.0,the absorption rate of NO 2-by modified apple pomace dietary fiber can reach 98.8%,which can reduce the concentration of NO 2-to 3.5μmol/L,and effectively avoid its harm to human body.The results of adsorption of sodium cholate show that the absorption rate of 3 g modified apple pomace dietary fiber to sodium cholate is 72.8%,which has a positive significance in reducing serum cholesterol.
