摘    要:以浙江新昌6个薄壳山核桃品种为研究对象,对果实和种子形态以及种仁的粗脂肪、蛋白质、糖、氨基酸和矿物质等主要营养成分含量进行测定分析。结果表明,薄壳山核桃含有丰富的脂肪、糖、蛋白质、氨基酸和矿物质等营养成分;品种间形态与营养成分含量存在显著差异,其中籽重8.90~14.55 g,仁重2.40~7.79 g,出仁率26.21%~58.73%,营养成分含量分别为:粗脂肪62.53%~70.95%,总蛋白6.03%~9.43%,总糖10.88%~15.30%,总氨基酸35.611~72.430 mg/g,人体必需氨基酸总量10.138~20.288 mg/g,矿物质含量0.56%~1.03%。

Analysis of Morphology and Main Nutrient Components of 6 Pecan Varieties
Abstract:Six varieties of pecan Carya illinoinensis (Wangenh.) K. Koch] in Xinchang district, Zhejiang Province were collected for measuring the morphology and determining the contents of the main nutrient components such as crude fat, protein, sugar, amino acid and minerals. The results showed that there were rich nutrient components in Carya illinoinensis, and there were significant differences in morphology and the contents of the main nutrient components of different pecan varieties. The seeds weight range from 8.90 g to 14.55 g, kernel weight range from 2.40 g to 7.79 g, with 26.21%~58.73% of kernel rate, the contents of crude fat, total protein, total sugar, total amino acid, total essential amino acid and total minerals were 62.53%~70.95%, 6.03%~9.43%, 10.88%~15.30%, 35.611~72.430 mg/g, 10.138~20.288 mg/g and 0.56%~1.03%, respectively.
