免疫增强型黑色营养膳的营养评价及其作用研究

摘    要:将黑黏米、黑豆、黑芝麻经发芽、破碎、挤压膨化、微波灭菌等工序加工成营养膳,按国标规定检测其营养成分含量。将营养膳添加入基础饲料,以20、40、60 g/kg bw3种剂量给予昆明种小鼠。连续喂养30 d后,观察其对小鼠各项免疫功能指标的影响。结果表明以黑黏米、黑豆、黑芝麻为主要原料加工制成的营养膳中蛋白质质量分数达到25.44%,脂肪18.81%,此外维生素和矿物质均较高,8种必需氨基酸均高出WHO/FAO模式标准。在免疫调节试验中,营养膳能增强小鼠的胸腺指数和脾指数,提升淋巴细胞刺激指数和小鼠NK细胞活性,提高腹腔巨噬细胞的吞噬功能和溶血素含量,其最适作用剂量为40 g/kg bw。
