醇-碱法提取啤酒糟中蛋白质

摘    要:以酒糟为原料,通过醇-碱法进行蛋白质提取。对影响蛋白质提取的因素,如提取剂醇-碱体积比和用量的选择、提取温度、提取时间等条件进行研究,并进行了正交试验。确定了获得最大提取量的条件为醇-碱体积比1∶2的混合液作为提取剂,每10 g干酒糟加入30 mL;提取温度30℃,时间70 min。

Abstract:The extraction of protein from brewer's spent grain is studied.The influences of the ratio of alcohol-alkali,the ratio of brewer's spent grain and extraction solvent,temperature and time of extraction,are discussed.The optimum conditions obtained by the orthogonal experiment are as follows: the ratio of alcohol-alkali is at 1∶2,extraction solvent is 30 mL per 10 g dry brewer's spent grain,and at the same time the extraction solution is kept at 30 ℃ for 70 min.
