摘    要:如今食品工业是纳米生物传感器的关键应用领域。功能化的纳米材料可以作为催化剂、固定化平台、光纤标签等,提高生物传感器的性能,使其具有更高的灵敏度、稳定性和选择性。纳米材料,如纳米金粒子、纳米复合物、磁纳米粒、纳米线、碳纳米管、纳米杆及量子点,在生物传感器中具有重要作用,特别是应用于食品检测。该文综述了如今纳米生物传感器在食品检测,特别是在对杀虫剂、病原体和糖类检测中的发展和应用,这些纳米生物系统也有利于研制、开发灵敏度高、适用性强、简便快捷的食品检测技术与方法。

Abstract:Nowadays, food industry is the key field of nanobiosensors application. Functional nanomaterials can be used as catalyst, immobilization platforms or optical labels, to improve the bio-sensing performance to exhibit higher sensitivity, stability, and selectivity. Nanomaterials, such as metal nanoparticles, nanocomposite, magnetic nanoparticles, nanowires, carbon nanotubes, nanorods and quantum dots are playing an important role in nanobiosensors, especially in food detection. This study reviewed the application and development of nanobiosensors in food analysis, especially in the detection of pesticides, pathogens, and sugar. The nanobiosensors system is helpful for develop high sensitivity, strong applicability, convenient and fast food testing techniques and methods.
