无花果粗多糖提取工艺及抗氧化活性研究

摘    要:以无花果为试材,采用均匀设计法对无花果中多糖类物质的超声辅助提取工艺进行考察,采用U7(73×31)表进行试验,并对所提取的粗多糖样品进行抗氧化能力检测。结果表明,粗多糖的提取工艺为提取温度70℃,固液比1:16(m:V),超声功率150 W,提取时间30 min,粗多糖提取率为11.20%。抗氧化试验表明粗多糖具有较强的还原力、抑制脂质过氧化能力,对超氧阴离子自由基的清除能力达85.39%,该结果表明无花果多糖具有抗氧化活性,对化学反应生成的活性氧自由基具有显著的清除作用。
