Abstract:In this article, the chemical structure and processing characteristics of Xylo-oligosaccharides were briefly introduced: The healthy functions of Xylo- oligosaccharides as functional foods ingredient were specially reviewed as well as its industrial production. Finally, the exploitation potential of Xylo-oligosaccharides in functional foods fields was briefly prospected.
