摘    要:以月桂酸甲酯和维生素 C为原料 ,以固定化的脂肪酶 (LIPOZYM IM)为催化剂 ,合成了月桂酸维生素C酯。研究了各种因素对合成反应的影响 ,确定了月桂酸维生素 C酯的较佳合成条件为 :维生素 C与月桂酸甲酯摩尔比为 5 .0∶ 1、反应温度为 60℃、脂肪酶用量为反应体系重量的 2 .5 %、反应时间为 1 0 h。在最佳反应条件下 ,产物一次收率为 61 .8%。用红外光谱对产物的结构进行了表征

Abstract:The synthesis of ascorbyl laurate from methyl laurate and ascorbic acid was studied. The reaction was carried out in non aqueous medium with an immobilized lipase LIPOZYM IM as biocatalyst. The influences of the initial molar ratio of substrates, the amount of lipase, reaction temperature and time were investigated, the optimum reaction conditions were found as follows:the molar ratio of ascorbic acid/methyl laurate is 5.0∶1,reaction temperature is 60 ℃,the amount of lipase is 2.5%(mass fraction),reaction time is 10 h. The one pass yield of ascorbyl laurate is 61.8%。The structure of this ester was analysed by infrared spectra.
