Applications of instrument analysis in the detection of chemical contaminants in food

The safety of the food industry has always been the focus of public concern. In the development of food industry, chemical additives are used more in food, which exacerbate the degree of food chemical pollution and cause potential harm to people''s health. Therefore, the detection of chemical pollutants in food has become an important field in the research of food engineering and how to detect the food chemical contaminants quickly and efficiently has been a concern of all sectors of society. This paper introduced the applications of a variety of instrument analysis in the detection of chemical contaminants in food and discussed application principles and conclusions on the different types of chemical detection methods. Besides, the detection of chemical contaminants in food was prospected, in order to promote the researches of rapid detection methods.
