真假干邑白兰地的鉴定研究进展

摘    要:白兰地是世界著名的蒸馏酒之一,深受世界各国人民的喜爱。白兰地的生产遍布世界各地,其中以法国干邑(Cognac)地区生产的白兰地品质最为优秀。由于干邑白兰地的价格昂贵,但制酒的成本却低廉,从而导致制作假冒名牌干邑白兰地的利润畸高,从而使得假冒白兰地的泛滥,其严重程度已经引起多方面的重视,特别是酒类管理部门的重视。本文对近年来干邑白兰地的真假鉴定技术的研究发展进行了分析,为了保证酒类市场的健康运行,有必要对真假酒更深入地进行研究,此项研究工作有着广泛的实际应用前景。

Abstract:Brandy is one of the world famous distilled liquor, and deeply loved by people all over the world. Brandy is produced all over the world, with the best quality in Cognac, France. Because of the high price of the Cognac brandy and the low cost of making wine, making the counterfeit brand of brandy is extremely profitable, which leads to the counterfeit brandy spread. The severity of the counterfeit brandy has been paid more and more attention, especially the attention of the wine management department. This article analyzed the research and development of identification technology of true and false Cognac''s in recent years. In order to ensure the healthy operation of the wine market, it is necessary to study the real and fake wine more deeply, which has a wide range of practical application prospects.
