公众对健身营养餐厅需求的调查研究

摘    要:目的研究健身运动与饮食营养关联性,分析公众对健身营养餐厅的需求。方法以调查问卷的方式,统计分析哈尔滨商业大学的校内学生及周边居民共315人关于健身营养餐饮知识的了解、对营养餐食的需求,对健身营养餐厅用餐环境的要求。结果 72.7%的消费者较关注食品卫生安全和72.04%的消费者较关注餐饮口味;51.97%的人可以接受的营养餐价格为30~40元;62.5%的人认为餐厅地理位置比较重要;11.51%的人侧重于餐厅室内设计方面;25.99%公众较为关注餐厅举办的宣传活动。结论为了改善公众因缺乏有关营养知识而导致的健身效果不佳的状况,有关部门应大力普及科学膳食知识,提升国民营养健康水平;健身营养类餐厅应注重食材安全卫生、改善餐饮口味、提供多功效的餐饮套餐,为公众树立一个科学、专业、健康的健身营养餐厅的形象,与同行业的其他餐厅协同发展,实现营养餐饮行业的良性发展。

Abstract:Objective To study the relationship between fitness and diet nutrition, and analyze the needs of the public for fitness and nutrition restaurants. Methods By means of questionnaire survey, 315 people including students of Harbin business university and nearby resident were statistically analyzed about the knowledge of fitness nutrition catering, the demand for nutritious meals, and the requirements for the dining environment of fitness nutrition restaurants. Results The results showed that 72.7% of consumers were more concerned about food hygiene safety and 72.04% about food taste. The price of nutritious meals acceptable to 51.97% of the people was 30 to 40 yuan, 62.5% thought the location of the restaurant was important, 11.51% focused on the interior design of the restaurant, and 25.99% of people paid more attention to the publicity activities held by the restaurant. Conclusion In order to improve people''s poor fitness effect caused by lack of nutrition knowledge, relevant departments should popularize scientific diet knowledge and improve the national nutrition and health level. Fitness nutrition restaurants should pay attention to the safety and hygiene of food materials, improve the taste of food, and provide multiple functional meal packages, so as to establish the image of a scientific, professional and healthy fitness and nutrition restaurant for public, develop in coordination with other restaurants in the same industry, and realize the healthy development of nutrition and catering industry.
