深圳市猪肉中磺胺的安全风险暴露评估

摘    要:目的利用食品安全监测数据对深圳市猪肉中的磺胺进行安全风险暴露评估。方法根据深圳市2016年4月至2017年3月的猪肉安全例行监测数据,用基于尾部数据估计模型(tail estimation,TE)、Thomas风险等级模型和风险评估预警模型等3种食品安全风险暴露评估模型计算了猪肉中磺胺类药物大于设定值的概率,风险等级值和食品安全预警指数,最后对深圳市猪肉安全风险进行了综合评估。结果 TE模型计算得到猪肉中的磺胺含量大于设定结果 100的概率为0.0068,Thomas风险等级模型计算得到深圳市猪肉中的磺胺含量的风险等级为75.1840,风险评估预警模型计算得到深圳市猪肉中磺胺的食品安全预警指数为2.5025×10~(-3)。结论 TE模型和Thomas风险等级模型可以作为食品安全风险评估的稳定模型来应用,深圳市猪肉中磺胺的食品安全风险很低。

Abstract:Objective To assess the safety risk exposure of sulfonamides in pork in Shenzhen by food safety monitoring date. Methods According to the routine monitoring data of pork safety in Shenzhen from April 2016 to March 2017, tail estimation model (TE), Thomas risk level model and the risk assessment warning model were used to calculate the probability that the sulfa drugs in pork were greater than the set value, the risk level value, and the food safety early warning index. Finally, a comprehensive assessment of pork safety risks in Shenzhen was conducted. Results The TE model showed that the probability that the sulfonamide content in pork was greater 100 was 0.0068. The Thomas risk level model showed that the risk grade of the sulfonamide content in Shenzhen pork was 75.1840. The risk assessment warning model showed that the food safety early warning index of the sulfonamide in pork in Shenzhen City was 2.5025?10?3. Conclusion TE model and Thomas risk grade model can be applied as a stable model for food safety risk assessment. The food safety risk of sulfonamides in pork in Shenzhen is very low.
