摘    要:冷冻饮品已纳入国家QS认证范围,生产企业必须通过QS认证才能生产和销售。在冷冻饮品的生产中,对于不同规模、不同产品品种(冰淇淋、雪糕、雪泥、冰棍、食用冰、甜味水)以及相应的工艺来说,归根到底是生产中产品的质量安全问题,主要问题有:生产工艺条件、设备的保养、生产过程的清洗、消毒、产品的贮存等。

Abstract:The freezing drinks have been integrated into the national QS certification scope. Food-processing enterprises cannot produce and market their products without the QS label. In the freezing drinks production, in regards to the different production scale, different product variety (ice cream, ice candy, edible ice, sweet taste water, etc) as well as corresponding formula, the adequate conditions to ensure food quality and safety in terms of production equipments maintenance, technological flow, in-place cleaning and disinfection and storage should be mostly considered.
