肉类食品供应链安全的可拓预警分析

为了有效预防和控制肉类食品安全中存在的风险，改善肉类食品安全现状，以肉类食品的原料供应环节质量、生产加工、运输与储藏、销售肉类食品质量、市场监测与管理等一级指标作为食品安全预警的关键因素，建立基于供应链的食品安全预警指标体系.确定各类指标的经典域与节域，提出肉类食品供应链安全的可拓预警模型，实现食品安全预警的目标，为后续采用可拓变换方法提出规避肉类食品安全风险策略提供前期研究基础.文中的模拟案例验证了方法的可行性.

A Study of Extensive Warning of Supply Chain Safety of Meat Food

In order to effectively prevent from the risk and control the safety of meat food, and to improve the present situation of meat food safety, the key elements of meat food safety warning are determined as the first grade indexes, which are the supply chain quality of raw materials, production and processing, transportation and storage, quality of sales meat food, as well as market monitoring and management. A warning index system is also derived on the basis of supply chain of food security, and the classical domain and the joint domain of the indexes determined. The extensive pre warning model of the supply chain safety of meat food is proposed and the goal of food security achieved, which may be helpful for proposing the risk strategy of meat food safety by using the Extenic change methods. A modified example shows the feasibility of the method.
