近红外光谱技术快速无损检测蓝莓总黄酮、花青素的研究

摘    要:为建立起蓝莓的快速无损检测体系,本研究应用近红外光谱技术对鲜蓝莓中总黄酮、花青素的含量进行了分析。在光谱全波长(4002500 nm)范围内采用偏最小二乘法(PLS)建立蓝莓总黄酮、花青素含量的定标数学模型,其相关系数分别为0.836和0.750,校正标准误差(SECV)分别为1.423 mg/(100g)和4.688 mg/(100g)。然后使用最优模型对32个未知样品进行预测,其预测相关系数Rp2分别为0.7968和0.7902,预测标准误差分别为2.779 mg/(100g)和5.013 mg/(100g),残差和分别为-0.003 mg/(100g)和-9.256(mg/100g)。实验结果说明,近红外漫反射技术可用于快速无损检测蓝莓中总黄酮、花青素含量。

Abstract:In order to establish the fast non-destructive testing of blueberry,the total flavonoids and anthocyanins in fresh blueberry were analyzed by near infrared spectroscope(NIRS). In the spectral region between 400~2500 nm,statistical mathematical models of total flavonoids and anthocyanins in blueberry were established within broad spectrum(400~2500 nm) using the partial least squares(PLS). The correlation coefficient were0.836 and 0.750 respectively,and the standard errors for calibration(SECV) were 1.423 mg/(100g) and 4.688 mg/(100g) respectively. Then 32 unknown samples were predicted by the optimal models. The correlation coefficient of prediction(Rp2) were 0.7968 and 0.7902 respectively,and the standard errors of prediction(SEP) were2.779 mg/(100g) and 5.013 mg/(100g) respectively,and residual sum were-0.003 mg/(100g) and-9.256 mg/(100g) respectively. The results showed that near infrared spectroscope could be used in fast non-destructive testing of total flavonoids and anthocyanins in blueberries.
