摘    要:基因芯片技术是鉴别微生物最有效的手段之一,为全面、快速、准确地进行食品安全检测提供了一个崭新的平台。扼要综述了基因芯片技术检测食品中病原性微生物的基本原理、检测过程、存在的问题、研究进展。

Abstract:Gene chip technology is one of the most effective means to detect of pathogenic microorganism, which provides a new platform to comprehensive, rapid, accurate food safety testing. In this paper, detecting principle of food-borne pathogen, the examination process, the existence questions, the research development of gene-chip were summarized in the paper.
