摘    要:用盐酸萘乙二胺比色法分别测定10种蔬菜中亚硝酸盐的含量,结果表明,在λ=538nm处,该络合物具有最大吸光度,在0~1μg·mL-1范围内,亚硝酸盐含量x(μg)与吸光度A之间具有良好的线性关系,其线性方程为y=0.0282x+0.0015,相关系数r=0.9997.从测定的芫荽等10种蔬菜当中,亚硝酸含量最高的为茄子...

Abstract:Nitrite in 10 vegetables was determined by spectrophotometry method with N-(naphthalene-1-y1) ethane-1,2-diamine hydrochloride.The experimental results showed that at 538 nm,the absorbance and the nitrite content had good linear relation in the range of 0~1 μg/mL,the linear equation was y=0.0282x+0.0015(r=0.9997).This method was suitable to determine the nitrite in the vegetable sample with good accuracy and precision.In 10 vegetables,the contents of nitrite in eggplant and carrot was the highest of 1.365 mg·kg-1,coriander was followed(0.550 mg·kg-1),and onion was only 0.089 mg·kg-1.
