Subject: Marketing proessures on dairy technology Maintaining the mass market

Abstract:The importance of liquid milk and of butter in the mass markets is shown, and the need for a wider variety of uses for these products stressed. The advances in the manufacturing of cheese is discussed and the role of technology assessed also the potential of new products made from membrane technology.
