摘    要:研究了硒对灵芝生长代谢的影响。考察了灵芝对硒的耐受浓度 ,硒对灵芝菌丝量、灵芝蛋白、灵芝多糖和矿物质代谢的影响 ,并探讨了硒对灵芝菌丝内部分酶代谢的影响。实验结果表明 :灵芝对硒的最大耐受浓度为 4 0 0 μg/ g,在硒浓度 4 0 0 μg/ g以内 ,硒对灵芝菌丝量、菌丝蛋白质及多糖的代谢没有明显的改变 ;除可明显增加矿物质锌的含量外 ,对铜、铁、锰和钙含量无影响 ;对菌丝内硒的富集作用是极其明显的 ,最高可达 70 0 0μg/ g左右 ;硒对灵芝酯酶同工酶、过氧化物酶同工酶没有结构上的影响 ,仅增加酶的活性。

Abstract:The effect of selenium on growth and metabolism in Ganoderma lucidum was studied. The change of mycelia weigh, dissoluble proteins, trace elements and metabolism of some enzymes was examined. The results showed that 400μg/g was the maximum endurable concentration of Se for Ganoderma lucidum . Se in concentrations from 0 to 400μg/g had no significantly adverse effect on the dry weigh of mycelia,the metabolism of dissoluble proteins. Polysaccharides and content of Cu, Mn, Ca, Fe compared with CK group. The content of Zn and Se in mycelia accumulating Se was significantly higher than the one in CK group. The Se content was as high as 7 000 μg/g. Se increased activities of some esterase and peroxidase isozyme, but didn't change their struction. These observations suggested that it was a good way that producing Ganoderma foods containing organic Se by fermentation as health foods.
