| 摘 要： | 利用偏光显微镜直观手段和X–衍射分析手段对马铃薯淀粉及其不同取代度辛烯基琥珀酸淀粉酯颗粒和结晶结构进行研究;结果表明,酯化后淀粉颗粒完整性遭到轻微破坏,部分淀粉颗粒偏光十字消失,结晶度有所下降,但淀粉晶型并没改变。

| Abstract: | The granules mrophology and crystal structure of octenyl succinic anhydride modified potato starch were determined by polarizing microscopy and x–ray dirffaction.Results show that the partial starch granules fall into pieces,and the crystallinity reduced a little bit,while there is no change in the crystalline pattern. |
