河北省地方稻米品质的检测与分析

摘    要:对河北省86个地方稻米品种的加工品质、蒸煮和食用品质及营养品质进行了检测与分析.结果表明86个稻米品种的糙米率和精米率均较高;多数稻米品种的蒸煮和食用品质较好;北部地区的大多数稻米品种营养品质优于其它地区,为河北省稻米的合理生产和加工利用提供了理论依据.

Abstract:The milling,cooking,eating and nutritive quality for 86 local rice varieties in Hebei were determined and analysed in the experiment.The result indicated that the brown rice rate and milled rice rate for 86 rice varieties were higher than averaage level,and the cooking and eating quality for most rice varieties were better than others,then the nutritive quality for most rice varieties in the northern part of Hebei was better than the rest.It provided the theoretical basis for reasonably producting and processing of rice in Hebei
