摘    要:虾在活体贮运过程中会受到温度、溶氧量、高度拥挤、振动等环境因素的影响,产生应激反应,对虾的机体功能及肌肉品质产生不利影响。本文主要介绍了运输应激的诱发因素以及环境胁迫引起的氧化应激、内质网应激和能量代谢、免疫系统及肌肉品质的变化,并列举了有关虾类活体贮运的对策与建议,以期为虾类的运输管理提供理论参考。

Abstract:During the live transportation, shrimp can be affected by temperature, dissolved oxygen, high crowding, vibration and other environmental factors, triggering stress response, which will adversely affect the body function and muscle quality of shrimp. The inducing factors of transport stress and the changes of oxidative stress, endoplasmic reticulum stress and energy metabolism, immune system and muscle quality caused by environmental stress are introduced in this article. It also liste the countermeasures and suggestions about the live transportation of shrimp, which would certainly provide a theoretical reference for the transportation management of shrimp.
