摘    要:冷鲜肉因其具有较好的口感,较高的营养价值和安全系数,广受消费者青睐,但是较短的货架期制约了冷鲜肉产业的进一步发展,对冷鲜肉进行保鲜处理从而延长其货架期是亟待解决的关键核心问题。可食性涂膜作为一种新型保鲜技术,可以在一定程度上解决冷鲜肉的包装及保鲜问题,延长其货架期。本文综述了可食性涂膜保鲜技术的原理、工艺及材料,例举其在肉类保鲜中的应用研究进展,分析了目前存在的问题,并对今后的研究内容和发展方向提出展望,以期为该技术在冷鲜肉中的进一步发展和应用提供参考。

Abstract:Chilled meat is favored by consumers because of its good taste, high nutritional value and safety factor. However, the short shelf life restricts the further development of the cold meat industry, and the preservation of cold meat to extend its shelf life is the key core problem that needs to be solved. As a new type of preservation technology, edible coating could solve the problem of packaging and preservation of cold meat to a certain extent and extend its shelf life. This paper reviewed the principle, process and materials of edible film preservation technology, cited the progress of its application in meat preservation, analyzed the current problems, and presented the outlook on the future research content and development direction, in order to provide reference for the further development and application of this technology in cold meat.
