| 摘 要： | 食源性生物活性肽具有显著的生理功能,成为世界范围内研究和开发的热点。随着生物活性肽产品的增多,建立针对特定种类肽的鉴定方法日益重要。本文在已有的关于食源性生物活性肽的研究基础上,借鉴中药的指纹图谱技术,对建立用于鉴别生物活性肽的指纹图谱的含义和构建方法进行了探讨。肽指纹图谱的建立可为肽产品行业的生产管理和真伪鉴定工作提参考。

| Abstract: | Food-derived bioactive peptides exert multiple biological functions and thus attract worldwide interests for research and application. The increasing prosperity of bioactive peptides products urges an accurate method for evaluation and determination of peptides products.Based on numerous researches of bioactive peptides in the passing decades,the definition and construction of fingerprint used for identifying bioactive peptides are discussed in the report.The fingerprint construction of bioactive peptides could serve as a theoretical reference for the production management and application in peptides food industry. |
